Often challenged and daunted by the task of putting together lunch, I was amazed by the incredible options presented at Lunch in a Box. Created by a wife and mother of a preschooler who lived in Japan for nine years, Lunch in a Box uses Japanese Bento techniques and makes them friendly for non—Japanese kitchens.
The photographs at Lunch in a Box are mouthwatering and make you want to start packing lunches in tidy boxes right away. There are links to simple, tasty recipes to get you started on creating your own easy lunch masterpieces and are properly packed for health and flavor. The creator of the blog was inspired to make such beautiful lunches when her husband was incorrectly diagnosed in 2005 with celiac disease, which is an intolerance to gluten. In an attempt to have her husband enjoy his lunches as much as his co—workers who were buying fancy ones, the creator began packing interesting, alluring lunches so her husband would feel privileged rather than deprived.
Although it turned out that the creator’s husband did not actually have celiac disease, she continued to make delectable lunches in a box and started blogging about them. Today Lunch in a Box has been nominated for the Blogger’s Choice Awards in the category of Best Food Blog.
I was totally impressed with the simple, practical idea presented at Lunch in a Box and my family is sure to be pleased with their future lunches in a box as opposed to those soggy peanut butter sandwiches in a brown bag.
